Where It Comes From

This cut comes from the plate or chuck section of the cow, near the ribcage. It includes both meat and bone, with a high amount of connective tissue and fat that breaks down beautifully during long, gentle cooking.

Cooking Notes

Bone-in short ribs are best braised low and slow—in the oven, slow cooker, or Dutch oven—to coax out their full tenderness and flavor. Sear first for added depth, then cook in liquid until the meat is fall-apart tender. Serve over mashed potatoes, polenta, or anything ready to soak up those juices.
