WHOLE ANIMAL PRICING

All orders must be placed using our online forms:



Once an order has been received, the head butcher will schedule some time for a phone consultation. During this call, the order will be finalized and all custom requests will be accepted/discussed.


A 50% deposit will be required to reserve the animal. The value of this deposit will be based on the average hanging weights of each animal and will be deducted from the final purchase.


The averages are:

BEEF: Forequarter: 180lbs, Hindquarter: 150lbs

PORK: Side: 115lbs

LAMB: Whole: 60lbs


Average weights are based on hang weight for the purpose of the deposit and do not reflect the total weight or yield of the order. If choosing the half/quarter options the weight will be close to the averages as we do not break those down.


BEEF Pricing

Quartered: $5.49/lbs – based on hang weight from slaughterhouse


Sub-primals: $6.94/lbs – based on scale weight in shop – plus a $255 processing and storage fee


Finished Cuts (unavailable): $9.19/lbs (includes ground product) – based on scale weight in shop


NOTE: “Half” beef is available, but fore/hind-quarters must be purchased together, i.e. can not purchase two forequarters or two hindquarters alone (individual quarters or primals/sub-primals are not available).


NOTE: The “hanging weight” is determined at a USDA inspected slaughterhouse using a USDA inspected scale. The “scale weight” is determined using the retail scale at the butcher shop which is inspected by the City of Boston Weights and Means Division.

PORK Pricing

Halved: $4.15/lbs – based on hang weight from slaughterhouse


Primals: $5.99/lbs – based on scale weight in shop – plus $90 processing and storage fee


Finished Cuts (unavailable): $7.64/lbs (includes ground products) – based scale weight in shop


NOTE: Single sides of pork are available (individual primals are not available).
