Where It Comes From
These chicken are a heritage French breed, called La Belle Rouge, and are raised on pastures on small family farms in Pennsylvania where they're fed regeneratively-raised grains. Naturally slower-growing, these chicken have a much fuller, richer flavor, larger legs, and less white meat than conventional chicken.
Cooking Notes
For a perfectly roasted chicken, brine and season generously with your favorite herbs and spices, and roast at a high temperature for a short period to crisp the skin before bringing the oven down to 350, cooking your chicken until the temperature reaches 165 degrees at the thickest part. Let rest at least 15 minutes before carving to retain juices.
