Where It Comes From

These chops come from the pork loin, which runs along the back of the pig between the shoulder and the leg. It’s a naturally tender muscle with a fine grain and little fat, similar to pork tenderloin but slightly larger and firmer.

Cooking Notes

Because they’re lean, pork loin chops are best cooked quickly over medium-high heat and not past medium doneness to avoid drying out. Sear, grill, or bake, then let them rest before serving. A quick brine or marinade can add moisture and flavor.
