Where It Comes From

The pork comes from pigs raised outside on East Coast farms, being pigs. We smoke it over hardwood, slow, the way it's always been done. The cure is a Mediterranean blend of fruit and spice extracts — no celery powder, no nitrites left behind. Contains: Walden pasture-raised pork, salt, water, brown sugar, natural flavors.

Cooking Notes

Drop a few slices in a cold pan and bring the heat up slow to let the fat render. Crisps up for breakfast, holds its own at dinner, good enough to eat on its own.
