Where It Comes From

This cut comes from the lower chest of the cow, a heavily used muscle group that supports much of the animal’s weight. As a result, it’s loaded with connective tissue and intramuscular fat, which break down beautifully during long, slow cooking.

Cooking Notes

Brisket should be cooked low and slow—whether in a smoker, oven, or slow cooker—to allow the collagen to break down and the fat to render. Season well, be patient, and let it rest after cooking to retain moisture. Slice against the grain for maximum tenderness.
