Where It Comes From
Cut from the chuck underblade in the shoulder area, the Sierra steak comes from a well-used muscle that’s loaded with real beef flavor. Like all Walden beef, it’s sourced from 100% grass-fed, pasture-raised cattle raised on small farms across the East Coast without grain, antibiotics, or hormones.
Cooking Notes
Best cooked hot and fast—on the grill, in a cast iron skillet, or under the broiler. Marinate if you like, but it’s not required. Cook to medium-rare, rest, and always slice thinly against the grain to keep each bite tender. It’s a workhorse cut that delivers big on flavor.
